Recipe: Strawberry Rosemary Honey Simple Syrup

It’s definitely hit that point in the summer where I want strawberries in everything. I love having flavored simple syrup on hand to add even more flavor to everything I’m eating (baked goods, ice cream, cocktails, etc). Strawberry simple syrup is so versatile and completely necessary in the summer. I played around with this recipe to keep the sugar low and the flavors high. Enjoy!

Domestocrat’s Strawberry Rosemary Honey Simple Syrup (yields 1/2 cup syrup)
4 cups water
1 cup strawberries, rinsed and halved
3 tbsp. honey
2 springs of fresh rosemary

Start by loading everything up in a medium sauce pot and bringing to a simmer over medium-high heat.

Simmer on medium-high heat until the strawberries have turned to mush and the liquid has reduced down to a syrup consistency (roughly 7-10 minutes).

Remove from the heat and cool in the pan for 5 minutes. When the syrup has cooled down strain out the mushy strawberries and rosemary springs. Store in an airtight tupperware container in the fridge for up to 2 weeks.

As I mentioned, the uses for this simple syrup are endless. My first go to usage was to pour 1 tablespoon of the syrup over ice and top with seltzer water. Perfect for sipping on the porch in the sun. Isn’t this color gorgeous?
