Yes, you read correctly – this pudding is made from an avocado. Trust me when I say that you will not be able to tell. Somehow the avocado perfectly transforms into a smooth, silky, rich base for this dessert that looks and smells like brownie batter and tastes like a deliciously rich chocolate pudding. I included the nutritional information for this recipe at the end of this post but don’t be scared by the numbers! Avocados are full of fiber, potassium, and vitamin K, and are a good fat (plant-based, nutrient dense fat and mainly composed of monounsaturated fat).
Domestocrat’s Avocado Chocolate Pudding (2 servings)
1 ripe avocado
1/4 cup unsweetened cocoa powder
3 tbsp. honey
2 tbsp. greek yogurt
1 tbsp. maple syrup
1 tsp. vanilla extract
This recipe couldn’t be easier – start by prepping the ingredients (half and scoop out the avocado and measure out everything else).
Put everything in a food processor and mix until the pudding is smooth and fully combined. If it looks too thick just add a teaspoon or two of water.
At this point the pudding is done! You can eat it right away or put in the fridge to chill for a little while. I preferred my pudding after it chilled for a few hours and the flavors came together.
Top with something that will add a little texture – slivered almonds, chocolate chips, or coconut. I went with almonds but any kind of crunch would be perfect!
